What "deviation" means

Expected versus actual service timing — nothing more mystical.

Sangati learns what normal service flow looks like for your venue, then watches for where reality drifts from it: a table seated but not greeted, an order in but not served, a bill requested but not closed.

When the gap crosses your threshold, it nudges. This is service-flow deviation detection — not guessing at intent.
